Feta Artichoke Turkey Meatloaf

    • 1 pound ground turkey
      1 large egg white
      2 tablespoons oatmeal (gluten-free certified, if needed)
      3/4 cup chopped artichoke hearts
      1/4 cup chopped roasted red peppers
      1/4 cup diced onion
      1/3 cup crumbled feta cheese
      1 clove minced garlic
      1 teaspoon dried Italian seasoning
      non-stick olive oil spray
      3 tablespoons ketchup, for glazing the top

Preheat the oven to 400 degrees. Mix all ingredients thoroughly. Bake for approximately 35 minutes. Cooking time will vary with different cooking vessels. Make sure to check the internal temperature to ensure the meatloaf is properly cooked.
